CHOCOLATE BANANA PROTEIN CUPCAKES

These little morsels are packed with protein and delicious too!  I also made a version using apricots and vanilla protein powder. 

Ingredients:

  • 2 cups mashed bananas
  • 2 eggs
  • 1 cup chocolate protein powder
  • 1/2 tbsp ground ginger
  • 1/2 tbsp ground cinnamon
  • 1/2 cup honey (optional if you want it a little sweeter)
  • pinch of salt

Mix all ingredients together, line a cupcake baking sheet with cups, and bake for about 40 minutes at 375.  Yummy!
