Chocolate Chip Cookie Poptarts

These little treats are so satisfying and just one will fill you up pretty well!

·         3 Tbsp ground oat flour

·         1 Tbsp coconut flour

·         1 tbsp unsweetened apple sauce

·         2 tbsp water

·         1 packet of Stevia

·         ½ tsp butter

·         ¼ Chocolate Brownie Quest Bar

·         2 small tortillas (I chose a gluten free corn tortilla, but you can choose any tortilla)

·         Glaze: ½ Cup Greek Yogurt, 1 scoop Chocolate Whey Protein

Make the poptart filling by combining the oat flour, coconut flour, applesauce, water, stevia, and butter in a food processor and blending until it looks like dough.  Then chop or break up the quest bar into small pieces, and mix it into the dough.  Spoon the dough into the tortillas and fold over as securely as possible.  Place in a Panini press, pan, or countertop grill with nonstick spray, and press down until the underside starts to brown, then flip.  Drizzle the glaze on top and dive in!
